Recipe: Apple-Spice Cake (snack cake using egg whites and applesauce)

APPLE-SPICE CAKE

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
2 egg whites
3/4 cup granulated sugar
1 1/2 cups applesauce
2 tablespoons canola oil
confectioner's sugar (optional, for topping)

Preheat oven to 375 degrees F. Coat 8x8x2-inch square baking pan with vegetable-oil cooking spray.

Stir together flour, baking soda, salt, cinnamon and nutmeg in large bowl; set aside.

In another bowl, beat whites, sugar, applesauce and oil until blended. Fold egg mixture into flour mixture. Scrape into prepared pan.

Bake in 375 degree F oven 45 to 50 minutes or until wooden pick inserted in center comes out clean. Transfer pan to rack and cool 5 minutes. Unmold cake onto rack to cool.

Sprinkle with confectioners' sugar if you wish.
