ROASTED VEGETABLES WITH MAPLE SYRUP AND CINNAMON
1 lb. unpeeled sweet potatoes
1 lb. butternut squash, peeled and cut in 2-inch cubes
1 red bell pepper, cored and cut in 4 wedges
1 yellow bell pepper, cored and cut in 4 wedges
1 large sweet onion cut in 8 wedges
FOR THE DRESSING:
1 tbsp. balsamic vinegar
1 tbsp. olive oil
1 tbsp. pure maple syrup
1/2 tsp. cinnamon
Preheat oven to 425 degrees F. Line two baking sheets with aluminum foil and spray with vegetable spray.
Place sweet potato, squash, bell peppers and onion in a single layer on prepared baking sheets. Spray lightly with vegetable spray.
Bake in center of oven 25 to 30 minutes until browned and tender. If trays are on separate racks, switch positions half-way through the baking time. Place all the vegetables in a serving dish.
TO MAKE THE DRESSING:
In a small bowl, whisk together vinegar, olive oil, maple syrup and cinnamon.
Pour dressing over top of the vegetables. Garnish with parsley and green onions.
