Pam: The 7-layer Salad is a great idea. Here are a few casserole recipes in case you want to serve something hot.

Martha's Company Casserole

Amount Measure Ingredient -- Preparation Method

1 1/2 lbs ground turkey
1/3 c chopped onion
1/3 c chopped green bell pepper
16 ozs tomato sauce
salt and pepper -- to taste
8 ozs egg noodles -- wide
8 ozs light cream cheese -- cubed
1 c cottage cheese, 2% fat
1/2 c plain low-fat yogurt
In a large skillet cook meat, onion and green pepper until meat is brown
and vegetables are tender. Drain off liquid, then stir in tomato sauce
and salt and pepper. Cook noodles. In a small bowl combine cheeses and
yogurt. Toss mixture with hot, cooked noodles. Layer half of the noodle
mixture into a 9x13" cxasserole. Spoon meat over center. Layer
remaining noodles over meat. Cover and bake at 375 for 30 minutes.
Uncover and bake another 10-15 minutes or until bubbly.

MAKE-AHEAD BRUNCH CASSEROLE

Amount Measure Ingredient -- Preparation Method

4 c White bread,cubed
4 oz Cheddar cheese,shredded
4 oz Swiss cheese, shredded
1/4 c Green onion,chopped
1/4 c Green pepper,diced
1/2 c Tomato,seeded & diced
10 Eggs,beaten
4 c Milk
1 tb Parsley,chopped
1 t Dry mustard
1 t Salt
1/4 ts Pepper
1 lb Bacon,fried & crumbled
Generously grease 13 x 9-inch pan. Arrange bread cubes in bottom of dish.
Layer cheese, green onions, green pepper, mushrooms and tomatoes on top of
bread. In large bowl, combine eggs, milk, and seasonings; mix well. Pour
egg mixture over bread; sprinkle bacon evenly over top. Cover; refrigerate
overnight. Heat oven to 325 F. Bake uncovered 50 to 60 minutes or until
center is set. Stand 10 minutes before serving. Makes 12 servings.

Low-Fat Chicken-Rice Casserole

1/3 Cup All-Purpose Flour
1 1/2 tsp Salt
1/8 tsp Pepper
1 Cup Nonfat chicken broth
1 1/2 Cups Skim milk
1 1/2 Cups Cooked Rice -- White or Wild
2 Cups Chicken breasts without skin -- cooked
4 Ounces Mushrooms
1/3 Cup Chopped green bell pepper
Heat oven to 350 degrees F. In large saucepan, blend flour, salt and
pepper. Stir in broth and milk. Stirring constantly, cook over low
heat, until mixture is smooth and bubbly. Bring to boil and stir 1
minute. Stir in remaining ingredients.
Pour into ungreased baking dish (10x6x1.5"), or 1 1/2-quart
casserole. Bake uncovered 40 to 45 minutes. Sprinkle with snipped
parsley.
