Recipe: Yams Baked in Marmalade Sauce (using orange marmalade, Smucker's recipe, 1980)

YAMS BAKED IN MARMALADE SAUCE

7 medium yams (2 to 2 1/2 pounds total)*
1/2 cup firmly packed brown sugar
1/2 cup Sweet Orange Marmalade
3 tablespoons butter or margarine, melted

Wash yams. Cover and cook in boiling water 20 to 30 minutes, or until tender. Cool. Peel yams, cut into quarters and arrange in single layer in shallow baking dish.

Combine brown sugar, marmalade, and butter, and pour over yams.

Bake, uncovered, in a 400 degree F oven 20 to 25 minutes, basting and turning yams frequently so they glaze on all sides.

*Drained canned yams may replace the cooked yams in this dish - 2 cans (1-pound 8-ounces each), drained, will work perfectly in this recipe.
