FUDGE PIE

Serving Size : 8

3 squares chocolate
1 stick butter
1 cup sugar
1/4 cup flour
2 eggs

MELT CHOCOLATE AND BUTTER IN DOUBLE BOILER. ( I PUT IN A METAL BOWL IN THE OVEN FOR JUST A MINUTE TO MELT)
MIX FLOUR AND SUGAR.
BEAT EGGS AND COMBINE WITH FLOUR MIX.
ADD CHOCOLATE MIX.
POUR INTO WELL GREASED 9" PIE PAN.

BAKE AT 350 DEGREES FOR 30-45 MINUTES.

SERVE WARM TOPPED WITH ICE CREAM.

1 stick butter
1 cup dark brown sugar
1/2 cup half and half
2 teaspoons vanilla
1 cup pecans -- chopped

Mix all ingredients in sauce pan.
Cook to boil stir for 4-5 minutes.
Add pecans.
Serve slightly warm or room temperature.

TRIPLE CHOCOLATE CAKE

1 package chocolate cake mix
1 package chocolate pudding mix -- instant
4 large eggs -- beaten
1/4 cup oil
1 1/4 cups water

1 cup chocolate chips
1 cup pecans -- chopped

Heat oven to 350 degrees.

Mix cake mix, pudding mix, eggs, water and oil.

Stir in chips and pecans.

Bake in greased and floured bundt pan about 1 hour at 350 degrees.

Frost with cream cheese frosting.

1-10oz. bottle of 7-up
1/2 cup red hots (cinnamon candy)
1 large pkg. cherry jello
1 cup applesauce
whipped cream
pecan pieces

Heat 7-up in saucepan, add red hots an stir until red hots are dissolved. When red hots are completely melted, add and dissolve jello. Cool a little then add applesauce. Place in refrigerator until it sets. Top with whip cream and sprinkle nuts on top.

1 large box of black cherry or raspberry jello
2 cups boiling water
1 can whole cranberry sauce, cold (chill in refrigerator
over night)
1 cup chopped pecans
1 cup finely chopped celery
1 small can of crushed pineapple

Boil water and stir in jello. Stir to completely dissolve. Add other ingredients and
stir until well mixed. Pour into serving dish and place in refrigerator until set.

Raisin Walnut Biscotti

1/4 cup butter or margarine, softened
2/3 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 cup chopped walnuts
1 cup Sun-Maid Raisins

Heat oven to 350 degree F. Beat together butter, sugar, eggs and vanilla.
Stir in flour, baking powder and cinnamon; mix well. Stir in walnuts and raisins.

Divide dough in half and shape into two long loaves, 1-1/2 inches in diameter. Place on greased baking sheet; flatten slightly.

Bake 18-20 minutes, until firm. With sharp knife, cut loaves diagonally into
3/4-inch thick slices. Place cut sides down on baking sheets.

Bake 10 minutes longer or until lightly browned. Makes about 2 1/2 dozen.

Just made a double batch of these biscotti, they are very easy to make and are very good.

(Makes 2 loaves)

*Okay--now this *isn't* the Amish friendship bread that
has the starter.

*If you let a bread machine do the kneading, put the yeast
in first, then the sugar/honey and salt, the rest of the dry
ingredients, then the wet ingredients.

2 1/4 tsp dry yeast
1/2 c. warm water (105-115 degrees F)
1/3 c. sugar
2 tsp salt
2 c warm water (105-115 degrees F)
2 1/2 T melted butter
6-7 c unbleached white bread flour

**Dissolve yeast in 1/2 c water with a pinch of the sugar.
In large bowl, combine sugar, salt, water and butter. Add
yeast mixture. Gradually add flour to form a soft dough.
Turn onto floured surface and knead until smooth. Place in
a greased bowl. Cover and let rise about 2 hours, or until
doubled. Punch down. (This would be the time to do your
third rising) Divide into two portions and form loaves. Place
in greased bread pans. Prick tops with fork (I never do this
and it comes out just fine). Let rise in warm place until
higher than pans (about 2 hours). Bake at 375 for 25-30
minutes. Cool 10 minutes. Butter tops of loaves (I also
never do this because I'm trying to cut back a little on fat).
Place pans on sides until loosened. Remove bread and cool
completely.

American: Amish Friendship Bread Starter
INGREDIENTS and PROPORTIONS:

Starting the Amish Friendship bread starter-like
sourdough bread
Sugar-1 cup
Milk-1 cup
Flour-1 cup

Place sugar, milk & flour in a large glass or plastic
bowl. Cover lightly with a plastic wrap
and sit it on your counter at room temperature. Stir
with a wooden spoon everyday for
17 days. On day 18 do nothing. On days 19,20, &
21 stir. On day 22 add 1 cup sugar,
1 cup milk & 1 cup flour
stir again. On days 23,24,25 & 26 stir. On day 27
add 1
cup milk, 1 cup sugar & 1 cup flour
stir. Its now ready to use to make the bread,
and to give away 2 cups of the starter for 2 friends,
1 cup to make the bread and 1 cup to keep
the starter going. When you give away a cup of the
starter, give these directions for keeping it
going and the recipes for using it.

Keeping a starter going once started:
-Do not refrigerate
-Do not use metal spoon or metal bowl
-Do not cover tightly-cover loosely with plastic
wrap
Day 1-do nothing
Day 2-Stir with wooden spoon
Day 3-Stir with wooden spoon & place in a bowl
large enough to hold thru Day 10
Day 4-Stir
Day 5-Stir
Day 6-Add 1 cup each flour
sugar
milk
Day 7-Stir
Day 8-Stir
Day 9-Stir
Day 10-Add 1 cup each: flour
sugar
milk stir & put 1 cup mixture into each of 3
containers.
Keep 1 (with recipe) for yourself and give other 2
(with instructions sheet on
how to keep the starter going and the recipe for
using it in bread) to friends.

Ingredients for Amish Friendship Bread
(using the starter)
1 cup oil
1/2 cup milk
3 eggs
1 teaspoon vanilla
2 cups flour
1 cup sugar
1 1/2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 box (5.1 ounce) instant vanilla pudding mix
1 cup chopped nuts
cinnamon sugar (about 1 tablespoon cinnamon to
1/4 cup sugar)

PROCEDURE:
Mix oil, milk, eggs & vanilla with the starter
mix well.
In a separate bowl mix flour, sugar, baking powder,
cinnamon, salt, baking soda,
vanilla pudding mix, and nuts. Add to liquid mixture
& stir thoroughly. Pour
into 2 large well greased (buttered) 9-by-5-inch loaf
pans (or 1
bundt pan) that have been sprinkled with a mixture
of cinnamon, sugar and flour. Sprinkle
more cinnamon & sugar on top of unbaked loaves
(or cake). Bake at 325 1 hour or until tests done. REQUIRED UTENSILS:
wooden spoon-glass/plastic bowl-loaf pans

Notes.
TIME-CONSUMING: 1 1/2 hours-27 days
DIFFICULTY RATE: Fair
WARNINGS:
This is a fermented bread starter-its supposed to
grow-bubble-smell strong-but NOT
supposed to change colors or grow mold-if molds,
or fungus grow on it-throw the whole
thing out-wash and dry your utensils well & begin
making the starter again.
Making this bread-bringing it to new neighbors &
sharing the starter mix is a great way
to make new friends. Make sure they have a copy
of the recipes for using, starting and making it. RECIPE FOR AMISH FRIENDSHIP BREAD

1 cup starter
2/3 cup oil
2 cups flour
1 cup sugar
3 eggs
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda
options: 1 cup raisins, chocolate chips, nuts,
dates, apples, etc.

Preheat oven to 350 degrees. Grease 2 loaf pans;
sprinkle with sugar.
(extra sugar besides what the recipe calls for!) In
bowl, combine
ingredients. Fold in any options. Pour into prepared
pans. Bake for
45-50 minutes. Cool on rack 10 mins. and remove.
Cool completely.

AMISH YEAST BUNS
good for pot luck

3 packages dry yeast
1 cup warm water
2 cups hot milk
1/2 cup oil
1/2 cup sugar
6-8 cups flour
1 tablespoon salt

Throw half of flour and the rest into food processor.
Mix well and add more
flour until it forms a soft ball. Knead in machine for
45 seconds. Allow to
rise. Punch down and make into rolls. Allow to rise,
again

Bake at 400* for 15 to 20 minutes. Brush with
butter while warm.

Dawn-NYS (05:37:27) : Molasses Sponge Cake

5 egg whites
1/4 cup white sugar
1/2 teaspoon salt
5 egg yolks
1/4 cup white sugar
1/2 cup molasses
1 teaspoon grated lemon rind
2 teaspoons lemon juice
3/4 cup cake flour

Preheat oven to 350 degrees F (175 degrees C). Beat egg whites to form moist peaks. Gradually beat in 1/4 cup white sugar and salt. Beat until very stiff and shiny.

Beat egg yolks and 1/4 cup white sugar together until light and fluffy. Beat in molasses, grated lemon rind and lemon juice. Stir in cake flour. Fold meringue gently into batter. Pour batter into an ungreased 9 inch tube pan.

Bake for 45 minutes. Remove cake from oven, and invert until cool. Loosen edges, and remove cake from pan.

1 lb. mashed potatoes
1 box frozen chopped spinach, thawed
3 slices bacon, cooked and diced into small pieces
1/2 cup chopped onions
1 tsp butter
Salt & Pepper, to taste

Saute onions in butter. Cook spinach according to directions on package. Add all ingredients to the mashed potatoes and salt & pepper to taste.

'Twas the night before Christmas, when all thru the abode
Only one creature was stirring, & she was cleaning the commode.
The children were finally sleeping, all snug in their beds,
while visions of Nintendo 64 & Barbie, flipped through their heads.

The dad was snoring in front of the TV,
with a half-constructed bicycle propped on his knee.
So only the mom heard the reindeer hooves clatter,
which made her sigh, "Now what is the matter?"

With toilet bowl brush still clutched in her hand,
She descended the stairs, & saw the old man.
He was covered with ashes & soot, which fell with a shrug,
"Oh great," muttered the mom, "Now I have to clean the rug."

"Ho Ho Ho!" cried Santa, "I'm glad you're awake."
"your gift was especially difficult to make."
"Thanks, Santa, but all I want is time alone."
"Exactly!" he chuckled, "So, I've made you a clone."

"A clone?" she muttered, "What good is that?"
"Run along, Santa, I've no time for chit chat."
Then out walked the clone - The mother's twin,
Same hair, same eyes, same double chin.

"She'll cook, she'll dust, she'll mop every mess.
You'll relax, take it easy, watch The Young & The Restless."
"Fantastic!" the mom cheered. "My dream has come true!"
"I'll shop, I'll read, I'll sleep a night through!"

From the room above, the youngest did fret.
"Mommy?! Come quickly, I'm scared & I'm wet."
The clone replied, "I'm coming, sweetheart."
"Hey," the mom smiled, "She sure knows her part."

The clone changed the small one & hummed her tune,
as she bundled the child in a blanket cocoon.
"You're the best mommy ever. I really love you."
The clone smiled & sighed, "And I love you, too."

The mom frowned & said, "Sorry, Santa, no deal."
That's my child's LOVE she is trying to steal."
Smiling wisely Santa said, "To me it is clear,
Only one loving mother is needed here."

The mom kissed her child & tucked her in bed.
"Thank You, Santa, for clearing my head.
I sometimes forget, it won't be very long,
when they'll be too old for my cradle & song."

The clock on the mantle began to chime.
Santa whispered to the clone, "It works every time."
With the clone by his side Santa said "Goodnight.
Merry Christmas, dear Mom, You will be all right."

Sometimes we need reminding of what life is all about. Especially at times during the Holiday season, when all we seem
to do is clean and bake and shop and... and... and ... You get the picture, I'm sure. So stop for a moment and hug that little one so special, whether he/she is 2 or 22, or even older than that. For they are the Gift that God gave us in life...and what a gift to be treasured, far above any other!
May the real meaning of Christmas be with you all this year, is my prayer. And my love I also send with this holiday message. To you, a friend I also treasure.

1 orange
1 cup sugar
2 cups pecan halves
wax paper

Scrape zest (rind) from orange. Juice orange and mix with zest and sugar. Bring to boil over medium heat stirring constantly. Add pecans and continue boiling over fairly high heat, stirring vigorously until most of the juice has been absorbed ( about 5 minutes) Spread quickly on wax paper to cool, separating pecans with a fork.

1 large bottle apple cider
1 small bag cinnamon candies (red hots)

Heat apple cider in saucepan over medium heat. Add red hots, stir constantly until red hots are dissolved.

12 oz can frozen orange juice concentrate
6 oz can frozen lemonade concentrate
6 oz can frozen limeade concentrate
6 oz can frozen cranberry juice concentrate
46 oz can pineapple juice
46 oz can peach or apricot nectar
ice
citrus slices

Dilute frozen juices with water according to directions. Mix with pineapple juice and nectar. Pour over ice in a large bowl. Garnish with citrus slices.

Dearilou,.Pittsburgh (09:21:31) : Graham Cracker Cookies

1 1/2 Stick of Oleo
1/2 cup of sugar
Boil for 2 minutes

Add: 1 1/4 cup of chopped nuts
1 teaspoon vanilla.

Line 9 x 13 pan with graham crackers (whole)
spoon mixture on evenly
bake at 350 degrees for 10 minutes
remove immediately to tin foil (otherwise mixture will harden and will be difficult to remove from pan)
break apart when cool.

Easy and tested. Very tasty!
