For oven-fried chicken, I use a 375 degree oven.
I put about 2-3 tablespoons of Extra-Virgin Olive Oil
in a baking pan.
Just toss some flour with seasoned salt in a bowl
with a tight cover. Shake your pieces of chicken in
the flour mixture and place in the olive oil. Bake for
about 30 minutes and then turn.
Try this one for variety:
oven at 400 degrees F
Lightly grease a cookie pan with shallow rims.
1 long tube saltine crackers, very finely crushed
1/2 t onion powder
other spices to taste)try marjoram, oregano,
rosemary and/or hot pepper
a couple eggs
Chicken pieces with skin on
Mix the crushed crackers with the onion powder, and
other spices(if desired). Place in a large zip-lock bag.
Set aside. Beat the eggs in a large bowl. Set aside.
Wash and dry the chicken pieces well. Dip the
chicken pieces, one by one in egg then toss them in
the bag of crushed saltines/spices. Holding the bag
closed, shake well to coat each chicken piece. Place
each piece skin side down on the greased cookie
pan. Bake in the pre-heated oven for 30 minutes, then
turn over and bake another 30 minutes, or until done.
Good hot or cold.

This is an old favourite of mine from way back. Quick,
easy and ingredients are always on hand.
Serves 4
Preparation 10 minutes
Cooking: 35 minutesOVEN FRIED CHICKEN PARMESAN
1 cup soft fresh breadcrumbs
1/3 cup grated Parmesan cheese
2 tablespoons finely chopped parsely
1/2 clove garlic peeled and finely chopped
1 teaspoon salt
1/4 teaspoon black pepper
3oz butter or margarine, melted
2-3 lb chicken pieces
Preheat the oven to 400F. Butter a large baking dish.
In a shallow bowl, combine the breadcrumbs, cheese,
parsely, garlic, salt and pepper. Place the melted
butter in another shallow bowl. Dip the chicken into
the butter then roll the pieces in the crumb mixture
and put them into the baking dish.
Pour the remaining butter evenly over the chicken and
bake, uncovered, for 35 to 40 minutes, basting
occasionally with the pan juices.

OVEN FRIED CHICKEN PARMESAN
1 garlic clove
1/4 pound butter, melted
1 cup soft white bread crumbs
1/3 cup finely grated Parmesan cheese
2 tablespoons minced parsley
1 teaspoon salt
1/8 teaspoon pepper
Chicken breasts, boneless with skin on
Preheat oven to 350 degrees.
Crush the garlic clove and combine with 2/3 cup
melted butter in a shallow baking dish. In another
dish
combine the bread crumbs, Parmesan cheese,
parsley, salt and pepper. First dip the chicken into
the butter
and then coat it in the bread crumb mixture.
Arrange the chicken 1 layer deep in a greased large,
shallow baking pan and drizzle evenly with remaining
melted butter. Bake uncovered, 1 to 1 1/4 hours until
fork tender and browned.

Oven fried Chicken:
5 lbs of chicken (thighs, legs, breasts, whatever)
3 cups of all purpose flour
2 tbl. of adobo seasoning with pepper
1 tbl. of garlic powder
2tbl of margarine
preheat oven to 350 degrees. In baking dish, melt
butter in oven for 5-10 minutes. combine all dry ingredients in bowl and
coat chicken in mixture. Place chicken in baking dish ( meatier sides
down) and cook for 25 mins. Flip over chicken and cook for another 30-35
minutes( up to you on how well done you like it). ENJOY!!!!
