Recipe: Fruit and Nut Stuffed Acorn Squash

FRUIT AND NUT STUFFED ACORN SQUASH
"A tasty way to enjoy acorn squash."



2 acorn squash, split, seeds removed
1 cup chopped dried fruit
1/3 cup chopped almonds
1 tablespoon Spice Islands Crystallized Ginger
1 tablespoon brown sugar
1 teaspoon Spice Islands Pumpkin Pie Spice
1 teaspoon Spice Islands Vanilla Extract
1/4 cup butter, softened
Grand Marnier (optional, for garnish)

Preheat oven to 350 degrees F.

Combine fruit, almonds, ginger, brown sugar, pumpkin pie spice and vanilla in a medium mixing bowl. Stir in butter, mix well. Divide filling evenly between squash; place on rimmed baking dish.

Cover squash with foil and bake for 40 minutes. Remove foil and continue baking until squash in done, about 15 to 20 minutes.

For an elegant finish, drizzle Grand Marnier over squash right before serving.
