Recipe(tried): Pan-Grilled Rib Eye Steak, Pepper Medley, Mixed Greens Salad with Feta

Good Morning Everyone!

One of my favorite cut of steaks is the Rib Eye, it is so tasty and tender, as good as a Filet Mignon I might add. I like to add flavor to my steaks by tenderizing them and rubbing them with seasonings. Then I let them rest in the fridge all day til ready to cook.

Today is my chores day so this meal is easy and quick to prepare.

Pan-Grilled Rib Eye Steak
serves 2

2 rib eye steaks
1/2 tsp. black pepper
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. ground coriander
1/2 tsp. onion powder
1/2 tsp. dried rosemary
1 Tbsp. butter
1 Tbso. olive oil
1/4 cup brandy

Combine all the dry ingredients in a small bowl and rub into both sides of steaks. Saran wrap and let chill in fridge till ready to cook.

Heat butter and oil in a large skillet til hot, add steaks and cook over med to med-high heat 7-8 minutes on each side or to the desired doneness you want. Sprinkle lightly with salt and remove to a warm platter and keep warm while you deglaze pan.

Add the brandy to the skillet bringing to a boil and scraping all the goodies towrads the middle. Boil for 1 minute or until all liquid is reduced by at least one half. Spoon sauce over steaks.

Pepper Medley

1/2 lb. white button mushrooms
1 yellow bell pepper, seeded, cored and sliced
1 red bell pepper, seeded, cored and sliced
2 garlic cloves, sliced razor thin
2 Tbsp. olive oil
2 Tbsp. parsley
salt and pepper to taste

Wash and quarter the mushrooms. Heat the olive oil in a large skillet and throw in the vegetables cooking over medium to med-high heat. When alsmost done, throw in the garlic and seasonings and stir veggies to mix flavors in.

Mixed Greens Salad with Feta

1/2 bag of pre-washed mixed greens
1 tomato, chopped
1/2 cucumber, chopped
1/2 package crumbled feta
1/4 cup dried cranberries
2 small yellow crookneck squashes, sliced
your favorite dressing

Mix all the vegetable in a large bowl, drizzle on the dressing and top with the feta and cranberries. Divide between two salad plates.
