Recipe(tried): Pan-Seared Swordfish

This recipe was excellent for us, since most swordfish recipes I have seen are
for the grill and we don't have one. Anyway, it was very delicious, from Bon
Appetit:

Pan-Seared Swordfish

2 one-inch thick swordfish steaks
1 Tblsp butter
1/2 Tblsp olive oil
3 shallots, sliced thin (didn't have these handy, just used some chopped onion
and garlic)
1/4 cup dry white wine
2 Tblsp balsamic vinegar
1 Tblsp drained capers, chopped
1 Tblsp water
1 Tblsp fresh chopped parsley

Season fish with salt and pepper. In heavy skillet heat butter and olive oil on
med. heat until foam subsides. Saute shallots for one minute then push to side
and add fish. Saute until golden on bottom, about 3 minutes, turn over. Add
wine, vinegar, capers, and water. Simmer until fish is just cooked through,
about another 3 minutes. Put fish on plates, stir parsley into sauce and spoon
over fish.

We especially liked it with the risotto. Enjoy!
