Recipe: Pancake Burger Bash (casserole with dumplings made with pancake mix) (1969)

PANCAKE BURGER BASH

"Two of America's favorite foods combined in an easy casserole."

1 1/2 lbs. ground beef
1/3 cup chopped onion
1 teaspoon salt
2 to 3 teaspoons chili powder
1 (8 oz.) can tomato sauce
1 (1 lb.) can tomatoes
1 (1 lb.) can whole kernel corn
FOR THE DUMPLINGS:
1 1/2 cups Pillsbury Hungry Jack Buttermilk or Extra Lights Pancake Mix
1/2 cup crushed corn chips
1 egg
2 tablespoons cooking oil
1/2 cup water

In Dutch oven or electric skillet, brown ground beef and onion; drain.

Stir in salt, chili powder, tomato sauce, tomatoes and corn (with liquid). Simmer 10 minutes; stir occasionally.

TO MAKE DUMPLINGS:
To measure pancake mix, lightly spoon into cup; level. In bowl, combine pancake mix with corn chips. Add egg, oil, water; mix well.

Spoon batter over bubbling meat mixture. Cover; simmer 15 minutes without removing lid. Dumplings will be puffy and dry on the top.

Makes 4-6 servings
