CASSEROLE COOKIES
2 eggs
1 cup sugar
1 cup chopped dates
1 cup coconut
1 cup chopped walnuts
1 tsp. vanilla extract
1/4 tsp. almond extract
Granulated sugar or powdered sugar (for rolling)
Red or green cherries (optional garnish)
Preheat oven to 350 degrees F.
Beat eggs in 2 quart buttered casserole dish. Add sugar and mix well. Add dates, coconut, nuts, vanilla and almond extract.
Bake 30-35 minutes at 350 degrees F. Stir 4 or 5 times during baking or stir when baking ends. (Batter will look like it's not done when you stir but don't cook it any more. It's supposed to look like that.)
Let cool, stirring occasionally.
When cool, form into 36 small balls, then roll in white or colored sugar. Set aside until cold before storing. Decorate if desired.
Store in airtight container. These improve with age.
