1/3 cup water
1 medium egg
2 egg yolks
2 tbsp butter (or canola oil)
2 tbsp grated orange or lemon zest
1/4 cup chopped candied citron
1 7/8 cups all-purpose flour
1/2 tsp salt
1 1/2 tsp active dry yeast
1/2 cup raisins
If the instructions that came with your bread machine call for the yeast to be placed in the baking pan first, the flour and salt should be added next, before the remaining ingredients. Otherwise, pour the water into your pan, then add the egg, egg yolks, butter (or canola oil), orange or lemon zest, citron, flour, salt, and yeast. If your machine has a separate dispenser for leavening, spoon the yeast into its slot after all the other ingredients have been measured into the baking pan.
Set your machine on its on the quick cycle. When it beeps a last call for ingredients, add the raisins. If your machine doesn't have a raisin alarm, add them 10 minutes into the first kneading cycle.
