Alison,Here is another recipe from the" Mrs. Fields Cookie Book".Again "no eggs".
Party Time Cookies
Yield: 2 dozen
3/4 c.salted butter,softened
1/3 c.white sugar
1 tsp.pure vanilla extract
1/4 tsp.pure almond extract
1 c.all purpose flour
1 c.(6oz.)semisweet chocolate chips
1 c.(4 oz.)slivered almonds
Preheat oven to 350 degrees F.Cream together butter & sugar in a medium bowl using an electric mixer set at medium speed.Add extracts & beat well.Scrape bowl.Add flour,chocolate chips & almonds & blend on low speed till just combined.Do not overmix.
Shape rounded tablespoons into 1 &1/2 inch balls & place on ungreased baking sheets,2"apart.Press balls with palm of hand or bottom of drinking glass into 1/2 inch thick rounds.
Bake 15-17 minutes or till cookies just begin to brown.Transfer cookies to a cool,flat surface.
