Recipe: Chocolate Chip Cookies (without eggs, Mrs Field's Cookie Book)
Desserts - Cookies, Brownies, BarsHi Alison, Here is a recipe that I think would last the journey w/o spoiling (no eggs) & would hold up as well. Thank you for doing this for our troops! May God Bless you & this venture of patriotism!
CHOCOLATE CHIP COOKIES
(Taken from Mrs Field's Cookie Book,I've not tried this recipe yet.)
Yield: 2 dozen
1 1/4 cup all purpose flour
1/2 tsp. baking soda
1/8 tsp.salt
1/2 cup salted butter, softened
1/4 cup white sugar
1/2 cup honey
1 cup (6oz.) semisweet chocolate chips
Preheat oven to 300 degrees F.
In a small bowl combine flour, baking soda and salt. Mix well with a wire whisk and set aside.
In another medium bowl blend butter, sugar and honey with an electric mixer at medium speed.Beat till light and soft, then scrape sides of bowl. Add flour mixture and chocolate chips, blend at low speed just till combined. Do not over mix.Drop dough by rounded teaspoonfuls onto ungreased cookie sheets, 1 1/2 inches apart.
Bake 18-20 minutes or til light golden brown. Immediately transfer cookies to a cool, flat surface.

Neither Mickey or I have tried this recipe, but visitors that have tried it haven't been happy with the results. If anyone comes up with an improvement on it please feel free to post.
