Recipe(tried): Pasta with Tomatoes and Basil/Mozzarella, Tomato and Basil Plate

Two more good and really simple basil recipes:

Pasta with Tomatoes and Basil

Take some tomatoes and chop them up (about 3-4). Squeeze out the seeds. Saute some onions and garlic. Add the tomatoes. Cook for about 20 minutes until the tomatoes get a little soft.

Cook the pasta, drain and mix together. Add the basil (about 1/2 c. shredded) and serve with some parmesan.

Mozzarella, Tomato and Basil Plate

In a lot of Italian restaurants you can get this. It is soooo simple to do and delicious!!

1 1b. mozzarella, sliced 1/4" thick
3-4 med-lg. tomatoes, cut 1/4" thick
1 bunch of basil

In a circular design around the side of a plate, take a slice of mozzarella, overlay a slice of tomato and then overlay a leaf of basil. Keep doing that around and around until the whole plate is filled up. Drizzle with olive oil and sprinkle with a little salt and pepper. Serve with some crusty Italian bread.
