Recipe: Peach Clafoutis

This comes from "Healthy Gourmet Cookbook"

4 large peaches peeled
1/2 Cup plus 2 Tbsp sugar
2 Eggs
1 1/4 Cups low-fat milk
1 tsp vanilla extract
1 Cup plain flour, sifted
Confectioners' sugar for decoration

Preheat oven to 350 . Lightly oil 9-in round cake pan.
Cut peaches in half, remove pits. Arrange halves, cut side down, snugly in pan. Sprinkle with 2 Tbsp of the sugar and set aside.
In large bowl, beat 1/4 Cup of sugar and the eggs until fluffy; add the milk and vanilla. Add flour and beat well.
Pour over peaches, bake for 20 minutes. Sprinkle with the remaining sugar, and bake for another 15-20 minutes, until sugar has caramelized to golden borwn.
Cool to lukewarm, dust with confectioners' sugar.
