Recipe: Peaches Supreme (with cream cheese stuffing)

Peaches Supreme

2 oz. cream cheese, softened
2 tsp. apricot preserves
1 (8 oz.) can pineapple tidbits, drained
2 large peaches or pears, halved and pitted
1 tbsp. chopped pecans
mint leaves for garnish (optional)

In a small bowl combine the cream cheese and apricot preserves. Blend well. Stir in the pineapple.

Slice a small piece off the bottom of the fruit so that it will sit on the plate.

Spoon 1/4 of the pineapple mixture into the center of the fruit.

Sprinkle with the pecans and mint leaf.
