Recipe: Peanut Butter Oatmeal Cookies (2)

I don't have that one, but here are a couple for you in case you don't find it.

PEANUT BUTTER OATMEAL COOKIES

3/4 c. butter flavored Crisco
1 c. peanut butter
1 1/2 c. brown sugar, firmly packed
1/2 c. water
1 egg
1 tsp. vanilla
3 c. Quaker Oats (quick or old fashioned, uncooked)
1 1/2 c. all-purpose flour
1/2 tsp. baking soda
Granulated sugar

Beat first three ingredients until creamy. Beat in water, egg and vanilla. Add combined dry ingredients; mix well. Cover, chill about 2 hours. Heat oven to 350 degrees. Shape into 1 inch balls. Place on ungreased cookie sheet; flatten with tines of fork dipped in granulated sugar to form crisscross pattern. Bake 9 to 11 minutes or until edges are golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store tightly covered. Makes about 7 dozen.

PEANUT BUTTER OATMEAL COOKIES

1/2 c. margarine, softened
1/2 c. peanut butter
1/2 c. sugar
1/2 c. brown sugar, packed
1/2 c. carrots, grated
2 egg whites or 1 whole egg
1/2 tsp. vanilla
1 c. flour
1/2 tsp. soda
2 c. oats

Preheat oven to 375 degrees. Cream margarine, peanut butter and sugar until fluffy. Add carrots, eggs and vanilla, mix well. Beat in flour and soda. Stir in oats. Drop by teaspoonful on ungreased sheet. Bake 10 minutes, remove to rack.
