Recipe: Peanut Butter Surprise (appetizer with shrimp)

PEANUT BUTTER SURPRISE
About 36 small cooked shrimp (can use canned shrimp)
1/4 cup peanut butter
3/4 cup mayonnaise
36 Ritz crackers
Soak shrimp in ice water for about an hour if using canned shrimp. Drain. Sprinkle with salt.
Spread a think layer of peanut butter on crackers. Spread a heavy layer (about 1 teaspoonful) of mayo on top of peanut butter, making sure edges are covered. Place a small cooked shrimp in the middle. Broil until mayo begins to puff and is slightly golden. These may be prepared in advance, refrigerated and put under the broiler when needed.
