Recipe: Peanut Chicken on a Stick (Richard Simmons recipe, blender)

PEANUT CHICKEN ON A STICK

12 to 16 oz. chicken tenders (or sliced boneless, skinless chicken breasts)
4 (6-inch) bamboo skewers
FOR THE SAUCE:
1/2 cup water
1/3 cup rice vinegar
1/3 cup creamy-style peanut butter
2 Tbsp. reduced-sodium soy sauce
1 Tbsp. sugar
4 cloves garlic, peeled
2 tsp. arrowroot or cornstarch
1/4 to 1/2 tsp. crushed red pepper flakes

In blender, combine all ingredients for the sauce until smooth, transfer to small saucepan. Heat over medium heat, stirring constantly until thickened, do not boil. Cool.

Pour half of the cooled sauce into sealable plastic bag, setting remainder aside. Add chicken to bag; seal and marinate in refrigerator for 1-2 hours.

Meanwhile, soak bamboo skewers in water.

WHEN READY TO COOK:
Preheat broiler.

Thread chicken tenders on skewers.

Broil close to heat, 1-2 minutes each side or until cooked through.

Heat reserved sauce. Serve in a bowl for dipping.

Makes 4 servings
