Recipe: Peanut Sate
Appetizers and Snacks PEANUT SATE
1# lean boneless beef sirloin
1 small onion, cut up
2Tbsp. soy sauce
2 Tbsp. lime juice
1 tsp. sugar
1 tsp. ground cumin
1 clove garlic, minced
1/3 cup chicken broth
2 Tbsp. peanut butter
1 Tbsp. molasses
1 tsp. soy sauce
1/4 tsp. crushed red pepper

Cut beef into 1 1/2" pieces. Place in a plastic bag set in a deep bowl.
For marinade, in a blender container or food processor bowl place onion, the 2 Tbsp. soy sauce, lime juice, sugar, cumin, and garlic. Cover and blend or process till smooth. Pour over meat in bag; close bag.
Marinate meat in the fridge for four hours, turning bag occasionally. Drain meat, reserving marinade.
For sauce; in a saucepan stir broth into peanut butter. Stir in molasses, the 1 tsp. soy sauce, crushed red pepper and garlic. Cook and stir till heated through. Keep warm. Thread meat onto four 8" skewers. Arrange on the unheated rack of a broiler pan. Broil 3-4" from the heat for 7-9 minutes or to desired doneness, turning occasionally and brushing with marinade. Serve sauce with meat for dipping. Makes 4 servings.
