Recipe(tried): Petite Sweet Pickles

Preserving - Pickles, Relishes

I always loved the "Sweet Store Pickles" you referred to. I was given this recipe by a friend and have found it to be my favorite "Sweet Pickle!" It takes a few days to complete, but is relatively easy. This recipe doesn't call for cauliflower or onion, but I'm sure that someone out there will know
how they can be added in.
Petite Sweet Pickles
7 lbs small cucumbers (I've used medium sized also, with equal success)
1/2 cup pure granulated salt
8 cups sugar
1 and 1/2 quarts vinegar
4 sticks cinnamon
2 teaspoons celery seed
2 teaspoons mixed pickling spices
1/2 teaspoon ground turmeric
1/2 teaspoon fennel (optional)
2 teaspoons vanilla

Day 1 in the a.m.:
Wash, scrub w/brush. Remove blossom end, but leave a little of the stem if psbl.
Drain. Put in a large bowl or crock and cover with boiling water. (I float a small plate over them to keep the cukes under the liquid.)
in the p.m.:
In the afternoon, 6-8 hours later, drain cucumbers well. Cover them again with fresh boiling water.

Day 2 in the a.m.:
Drain cukes. Cover with fresh boiling water.
in the p.m.:
Drain the cucumbers. Add salt and then cover with fresh boiling water.

Day 3 in the a.m.:
Drain the cucumbers and poke each cucumber in several places with a fork.
In saucepan combine 3 cups of the sugar and 3 cups of the vinegar, the whole pickling spices, turmeric and fennel. Heat to boiling and pour over cucumbers.
They will only be partially covered.
in the p.m.:
Drain the cukes and save the syrup. Combine the saved syrup with 2 cups of the sugar and 2 cups of the vinegar in a saucepan. Heat to boiling and pour it over the cucumbers.

Day 4 in the a.m.: Drain the cucumbers and save the syrup. Combine the saved syrup and combine 2 cups of sugar and 2 cups of vinegar in a saucepan. Heat to boiling and then pour it over the cucumbers.
in the p.m.:
Drain and save syrup. Heat the syrup in a saucepan and combine with 2 cups of sugar and 1 cup of vinegar. Bring this syrup mixture to a boil and pour over cucumbers.
In the evening..Wash and rinse canning jars. Keep them hot. Combine the syrup with remaining sugar and vanilla. Heat to a boil. Pack the cucumbers into your canning jars, pour syrup to within 1/2 inch of the top of jar. Process in a boiling water bath for 5 minutes to seal jars.

I think these Sweet Pickles will be close to what your looking for, you will probably like it a tad better. Enjoy
