ORANGE FREEZE PIE
1 deep dish pie crust shell, baked
3 oz pkg. orange flavor gelatin
2/3 c boiling orange juice
1 c vanilla ice cream, softened
11 oz can mandarin oranges, drained
1 c whipped topping, thawed
Dissolve gelatin in boiling orange juice.Add ice cream by spoonfuls, blending until dissolved.Chill until slightly thickened.Stir in mandarin oranges.Fold in whipped topping.Pour into pie shell.Freeze until firm, about 2 hours.Remove from freezer 15 minutes before serving.Serves 8

OPEN FACE APPLE TART
1 Pastry for 9"-10" flan pan
6 Apples; Golden Delicious; large
1 tb Lemon juice
1/4 c Sugar; granulated
1/2 c Raisins; optional
1 ts Butter; melted
1/2 c Jam; apricot
Whipped cream - optional
Roll pastry out and fit into flan pan. Peel and core apples, cut into slices about 1/4" thick, you should have about 6 cups. Toss with lemon juice and sugar. Arrange apple slices; slightly overlapping in circles on pastry; make 2 or 3 layers. Scatter raisins over top if desired. Drizzle with melted butter. Place on bottom rack of 400F oven and bake for 35 minutes or till golden brown. If apples start too brown too much, cover loosely with foil. In small, saucepan, heat apricot jam till melted, spoon evenly over apples. Bake for about 5 minutes. longer or till apples are glazed. Let cool to room temperature. Serve with whipped cream if desired.

Here is a recipe that I tried this past Thanksgiving and it was a real hit! I don't think that it is actually "low fat" but it is lightened (egg whites and evaporated milk and it is delicious! Hope that this helps in your search.
1 single crust pie pastry recipe (I used the one off of the Crisco box)
1 15 ounce can pumpkin (not pie filling)
2/3 c sugar
1 1/2 tsp cinnamon
1/2 tsp ginger
1/8 tsp allspice
4 egg whites
1 c evaporated milk
1/4 c water
whipped dessert topping (optional)
Prepare pastry according to the recipe and line a 9 inch pie plate.
Stir together pumpkin, cinnamon, ginger and allspice in a bowl. Add egg whites. Beat mixture with a fork until combined. Stir in evaporated milk and water. Pour the filling into pie plate and cover the edges of the pastry with foil. Bake at 375 F for 25 minutes. Remove foil and bake for another 25-30 minutes or until a knife inserted near the center comes out clean. Cool on wire rack. Cover and store in the fridge. Serve with whipped topping. Makes 8 servings. Enjoy!

Here is my Mothers recipe for Apple Crumb Pie
On pie pastry in a 9 in pie pan.
4 or 5 tart apples peeled and slice. or 1 to 2 cans pie sliced apples (not with anything else added.)
1/2 Cup sugar
1 tsp cinnamon
Mix the three ingredients together and pour in pie shell
Topping
3/4 Cup flour
1/2 Cup sugar
1/2 to 1 tsp cinnamon
1/3 Cup butter
Mix these ingredients together chopping butter in until it looks crumbly and sprinkle over apples.
Bake 450 degrees for 15 minutes and then reduce heat to 350 degrees and bake for about 30 minutes more.
Another crumbly topping you could make is:
Mix together
6 oz melted butter
1 beaten egg
1/2 to 3/4 sugar
1 Cup flour
1/2 cup chopped pecans
Bake pie at 375 degrees for about 40 minutes.
Serve with ice cream or whipped cream sweetened with maple syrup if desired.

1 cup sugar
2 tablespoons flour
1 tablespoon cornmeal
In another bowl, mix;
2 eggs
1 cup milk
1/2 stick soft butter
1 teaspoon vanilla
1 cup coconut (I use the packaged kind)
Combine the two sets of ingredients and pour into an unbaked pie shell.
Bake at 375 degrees for 35-40 minutes or until nicely browned.

Perfect Apple Pie
2 frozen pie crust -- unbaked
6 cups apple -- sliced thin
3/4 cup Sugar
2 tablespoons Flour
1 teaspoon Cinnamon
1 dash Nutmeg
1 tablespoon lemon juice
Combine sugar, flour, spices, lemon juice and mix with apples. Line 9 inch pie plate with pastry. Fill with apple mixture and adjust top crust. Cut slits for escape of steam in top of crust. seal. Bake at 425 for 20 minutes; cover with foil and bake for 25 minutes. Remove foil and bake for 5 minutes or until crust is golden brown.
FOR UPSIDE DOWN PIE........ combine 1/2 cup whole pecans, 1/2 cup margarine and 1/2 cup brown sugar. Butter the pie pan and don't miss a spot. Spread 1/2 cup of butter and get the sides too. Place 1/2 cup pecans in the bottom of the pie pan, and sprinkle with 1/2 cup brown sugar. Now, put your bottom pie crust on top of the pecans. In fact, forget that they (the pecans) are there. Just proceed with your apple pie, as usual, with one exception. You don't want a bulging pie, kinda firm and flat. When you have both crusts sealed and fluted, bake at 400 degrees for exactly 50 min. Cool for 5 min. on a rack and turn out on a serving dish immediately. When you do this, you are flipping it over so that the pecans are on the top, and the usual top of the pie is on the bottom. You must flip it out after 5 min. or the butter and sugar will harden and you won't get it out. Let me tell you it is always a hit and people are astounded. The combination of the sugar, pecans and apple pie are delicious.

Here are my two favorite pie recipes coconut and chocolate
Coconut Cream Pie
1 9-inch pie shell, baked
2 cups coconut, sweetened
1/3 cup flour
1/4 tsp. salt
1/4 cup sugar
1/2 cup milk
1 1/2 cups hot milk
4 egg yolks
1 Tbsp. butter
1 tsp. vanilla
Preheat oven to 350 degrees F. Toast coconut by spreading it on a cookie sheet and tossing every few minutes. This should take about 10 minutes. Remove from oven when golden brown. In the top of a double boiler over boiling water, mix flour, salt and sugar. Add 1/2 cup milk and stir until smooth. Add the 1 1/2 cups hot milk and stir constantly, until thick and smooth. Beat egg yolks in another bowl and add 1/2 cup of the sauce to them, stirring constantly. Pour this mixture back in the double boiler, stirring constantly. Cook a few minutes longer. Remove from heat and stir in vanilla and butter. Stir in 1 1/2 cups of the coconut. Pour mixture into cooled pie crust and refrigerate.
To make topping beat 1 cup heavy cream with 1 Tbsp. sugar and 1 tsp. vanilla until stiff. Pile on top of pie filling and spread to edges of shell. Sprinkle remaining coconut on top. Keep refrigerated.
Chocolate Cream Pie
1 9-inch pie shell, baked
1 cup sugar
1/2 cup + 2 Tbsp. flour
1/2 tsp. salt
2 1/2 cups milk
3 oz. unsweetened chocolate
3 egg yolks, beaten
1 tsp. vanilla extract
2 Tbsp. butter
In the top of a double boiler, over boiling water combine flour, sugar, and salt. Gradually stir in milk. Add chopped chocolate. Cook and stir constantly until mixture is smooth and thick; remove from heat. Gradually
stir 1 cup of hot mixture into beaten egg yolks. Add egg mixture back to the chocolate mixture. Return to double boiler and cook until mixture begins to boil. Remove from heat and stir in the vanilla and butter. Pour
into pie shell and refrigerate at least 3 hours.
Topping: Whip 1 cup heavy cream with 1/2 tsp. vanilla and 1 Tbsp. sugar until stiff. Pile on top of pie filling and spread to all edges of the pie crust. Refrigerate.

MINI APPLE PIES - this makes 10 pies each recipe so you will have to more than double but it is easy and a bit different.
Tube of refrigerated biscuits(10 biscuits in a tube)
1 tart apple, peeled,cored, and finely chopped
1/4 cup raisins
3tbsp sugar
1 tsp cinnamon
2 tbsp butter or margarine
Using a rolling pin, flatten each biscuit to a 3-4 inch circle. Combine apple, raisins,sugar, and cinnamon. Place a tbsp of mixture on each biscuit. Dot with butter. Enclose filling and pinch to seal. Place in ungreased muffin cups and bake at 375 for 11-13 minutes or until golden brown.recipelink.com (12:52:57) :

12 slices bacon, crisply fried and crumbled
1 cup shredded natural Swiss cheese
1/3 cup chopped onion
2 cups milk
1 cup Bisquick baking mix
4 eggs
1/4 tsp salt
1/8 tsp pepper
Heat oven to 400. Grease 10-inch quiche dish or pie plate, 10 x 1-1/2 inches. Sprinkle bacon, cheese and onion in plate. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 min. with hand beater. Pour into plate. Bake until knife inserted between center and edge comes out clean, 35 to 40 min. Cool 5 minutes.
Hope this is it, I've had this recipe hanging around for ages. Use to love making this!

Makes One 9-inch Pie
1 Tbs sugar
1/2 cup milk
1 3-ounce pkg cream cheese, softened
1-1/3 cups (about) Baker's Angel Flake coconut
1 8-ounce container Cool Whip topping, thawed
1/2 tsp almond extract
1 9-inch graham cracker crust
Beat sugar and milk into cream cheese until smooth. Fold in coconut. Fold in Cool Whip and almond extract. Spoon into pie crust. Freeze until firm - about 4 hours.
A friend gave me this recipe after she made it for us - I think it was a Baker's Angel Flake coconut recipe originally.
