This Pignalia Nut Cookie recipe is one of my fav's! My girlfriend use to make them for me every Christmas until I found out how easily they were made. Now I make them throughout the year! Instead of using Pignalia nuts, I use walnuts. The choice is yours. The recipe is as follows:
1 lb. butter or margerine (butter makes them more crumbly but flavorful)
1 cup packed confectionary sugar
3 cups flour
1 tsp. vanilla
1 cup pignalia nuts or finely chopped walnuts
Soften butter or margerine. Whip it well. Mix in sugar and vanilla. Add flour, a little at a time, beating after each addition. Then beat in nuts. Chill batter for handling. Roll into 1 inch balls. Bake on ungreased cookie sheets in a 300 degree oven. Check every 5 minutes. They are done when the bottom of the cookie is slightly brown.
Makes approx. 5 and 1/2 dozen.
