Recipe(tried): Pimento Cheese

12 ounces grated cheddar cheese
2 four-ounce jars pimento, drained
1 cup mayonnaise
Place all in blender or food processor and process until smooth.

Everyone I make it for likes it just like that. But here are options for Nathalie Dupree's "New Style Pimento Cheese":

Make the above in a large bowl so it remains a little chunky, and add
1 small onion, grated
2 Tablespoons Worcestershire sauce
Freshly ground black papper
