PINE NUT AND ORANGE WILD RICE
1 cup golden raisins
1/2 cup water
1 cup uncooked long grain and wild rice
1/2 cup pine nuts, toasted
2 tablespoons chopped fresh parsley
2 to 4 tablespoons olive oil
2 tablespoons grated orange rind
2 tablespoons orange juice
1/4 teaspoon ground black pepper
Combine raisins and 1/2 cup water in a small saucepan. Bring to a boil; cover; reduce heat, and simmer 3 minutes. Remove from heat and let cool, then drain and set aside.
Cook rice (with 2 cups water for 20 minutes).
Combine rice, raisins and remaining ingredients.
