Recipe: Easy Broccoli Rice Casserole (using Minute Rice) for Robin

EASY BROCCOLI RICE CASSEROLE

1/2 cup diced onion
1/2 cup chopped green peppers
1/2 cup chopped celery
2 tablespoons butter
2 cups Minute Rice cooked
2 cups shredded cheddar cheese, divided use
2 pkgs. (10 oz. each) frozen broccoli, thawed, drained
1 can condensed cream of mushroom soup
1 can condensed cream of celery soup

Preheat oven to 350 degrees F. Grease a 3-quart casserole dish

In a heavy skillet, saute onion, peppers, and celery in butter until tender.

Combine rice, sauteed onion mixture, 1 cup Cheddar cheese, broccoli, and soups. Transfer to a greased casserole dish.

Cover and bake at 350 degrees F for 30 minutes, or until hot and bubbly.

Take off cover, top with remaining 1 cup Cheddar cheese, and bake about 5 minutes longer, until top is lightly browned and cheese is melted.
