PINEAPPLE ICE
1 cup sugar
2 cups water
1 (20 ounce) can crushed pineapple
1/2 cup lemon juice
Dash salt
Mix sugar and 2 cups water in saucepan. Bring to boil and boil 5 minutes. Cool.
Add pineapple, lemon juice and dash salt. Freeze until firm in ice cream machine, following manufacturer's directions for freezing. Let stand in freezer several hours to mellow before serving.
Makes about 1 1/2 quarts
SERVING SUGGESTION:
PINEAPPLE ICE WITH CREME DE MENTHE:
Pile Pineapple Ice in serving dishes and make a deep depression in center of each serving. Fill hollow with green creme de menthe.
