INDONESIAN STYLE COLESLAW
This is great to serve with many Asian style dishes, or even simply grilled pork or poultry. It is fresh and crunchy! People just love it and always ask for the recipe. Most of it can be made ahead as well, which may be really helpful for your event.
1/2 cup dry roasted peanuts
2 cloves garlic
1 or 2 serrano chilies (adjust to your heat preference)
1/3 cup rice vinegar
1/2 cup vegetable oil
1 1/2 Tbsp sugar
1 tsp dry curry powder
4 cups shredded cabbage
4 chopped green onions
1cucumber, peeled, seeded, quartered & sliced
3 Tbsp cilantro
Mix together dressing ingredients, vinegar, oil, sugar & curry powder. Keep in the frige until ready to serve.
Combine cabbage, green onions, cilantro and cucumbers in a bowl. Again, keep in fridge until ready to serve.
Grind nuts, garlic and serranos very finely in a food processor, or finely chop by hand. Set aside (be sure not to add these too early or the nuts get a bit soft.)
When ready to serve, toss everything together.
Serves 8 to 10 as a side dish.
