PISTACHIO PARTY COOKIES
1/2 cup powdered sugar
1/2 cup butter, softened
1/2 cup cooking oil
2 eggs
1 tsp. almond extract
1 (3.4 oz.) instant pistachio pudding mix
2 cups flour
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/8 tsp. salt
1/2 cup chopped pecans
Granulated sugar (for rolling)
In large bowl, combine powdered sugar, butter, oil, eggs, almond extract, and dry pudding mix. Mix well. Add flour, baking soda, cream of tartar and salt. Mix well. Stir in pecans. Chill dough for easier handling.
WHEN READY TO BAKE:
Preheat oven to 375 degrees F.
Form into 1 inch balls. Roll in sugar. Place on ungreased baking sheets.
Bake at 375 degrees for 10 to 15 minutes.
Hi Ginger,
I have doubts that this is the recipe you're looking for. I think these will spread a little when baking. If the recipe you're looking for doesn't turn up, you can try using pistachios in a Mexican Wedding Cookie recipe and adding a few drops of green food coloring.
