Recipe(tried): Planning Vacation Meals - A little more info for BV/AR

I had another thought after I wrote to you. When my DH and I used to stay overnight on the boat I would make dinner on the grill. Since you're going to be at Gulf Shores, you should be able to get wonderful seafood. So here goes:
Take a rectangular piece of aluminum foil and spray it with Pam. Place a trimmed fillet of fresh uncooked fish on one side. Season with Cajun seasoning. Top with julienned vegetables (onion, carrot, bell pepper -- that you have already cut up at home), a dollop of butter and a small slice of lemon. Fold the foil over the fish and seal the edges well by folding several times. Place on the grill and cook about 5 to 7 minutes per side. Even the kids can help with this kind of meal. My brownie troop used to make hamburgers this way -- that's where I got the inspiration! I also do this with canned potatoes. That's right: canned potatoes. I sort of grew up on them camping with my parents so I'm sort of used to the taste. The potatoes are already cooked, so they really only have to be heated in their aluminum foil packets. The potatoes may be an acquired taste, however. But this is easy to do, everyone can participate and there are no pots and pans to clean up!
