Recipe(tried): Vacation Meal Ideas - Tex-Mex night

BV, When it was my turn to cook at the beach house last year, I served make-your-own tacos with seasoned ground beef and chicken. I cooked and seasoned the two meats at home and froze them, way ahead of time, and thawed them the night before it was my turn to cook. Purchase pre-shredded cheese if you like, then all you have to do is dice a few tomatoes, cut up some lettuce, and heat some taco shells or tortillas. I also served chicken enchiladas and spanish rice (which I made there because I like to play in the kitchen more than on the beach). It would also be easy to make a big pot of chili at home take that along.

Same with lasagne - freeze it ahead, then buy some bread and salad to go along. My SIL served chicken parmigiana frozen ahead, also. Everybody loved it.
