This recipe isn't elegant, but it is EASY, and quick and kids usually love it.
Cook rice, allow about 1/2 to 2/3 cups per serving needed.
Heat 1 can of chili for 4 people.
Make cheese sauce (I use Velveeta and a little milk) melted in microwave.
Chop lettuce and tomatoes, onions (optional).
Crush Hi-Ho crackers in bowl.
You can prepare each plate - but I usually set out the ingredients and let everyone make their own. Here's the process - sprinkle a thin layer of cracker crumbs on bottom of dinner plate. Top with layer of rice. Spoon serving of chili on top of rice. Drizzle cheese sauce on top of chili. Layer lettuce and tomatoes on cheese and add olives, cut onions and / or salsa if you prefer.
This is very filling and if everyone makes their own they can use more or less of the ingredients they like. The speed in cooking the rice is what determines how long it takes. You can cook the rice earlier and just micro it at the last minute. If you hate canned chili try it with homemade. But the canned variety makes it a something to whip up fast.
