Recipe(tried): Poppy Seed Spice Cake

I have made this cake several times and everyone really likes it.

Poppy Seed Spice Cake

1 pkg. spice cake mix
1 pkg. butterscotch or caramel instant pudding(4 serving size)
4 eggs
1/4 cup poppy seeds
1/2 cup oil ( I have used 1/4 cup oil and 1/4 cup applesauce instead)
1 cup water

Place all ingredients into a large mixing bowl. Beat on medium speed for five
minutes with an electric mixer. Grease and flour a 10-inch tube pan and bake in
a pre-heated 350 degree oven for 45 to 55 minutes or until cake tester inserted
in the middle comes out clean. Leave in pan for about 5-10 minutes and then
remove.

Notes: I usually make an icing with whipping cream or cool whip with some spices
added, and split the cake into two layers. I'm sure you could make other
fillings to add to the middle if desired. Although I haven't tried it, I think
you could make this in a bundt pan, or even a 9 by 13 cake pan.
