MOM AND POP MONDAY MEAT PIE
"Late getting home? Think all those weekend leftovers in a casserole, topped with biscuits. Get Dad to help with the meat and vegetables while you roil out the dough."
1/2 cup chopped celery
1/2 cup chopped onion (or 3 tablespoons instant minced onion)
1/2 cup chopped green pepper
2 tbsp shortening
2 cups cut-up cooked beef, pork or veal
1 (10 oz) pkg frozen green peas or corn, cooked and drained
1 cup diced cooked carrots
1 cup diced cooked potatoes
2 cups seasoned leftover gravy (or 2 cans (10 3/4 ounces each) gravy or prepare 2 envelopes (7/8 ounce each) gravy mix)
FOR THE BISCUITS:
2 cups Bisquick baking mix
1/2 cup cold water
Heat oven to 450 degrees F.
Cook and stir celery, onion and green pepper in hot shortening in large skillet until onion is tender. Stir in meat, vegetables and gravy. Pour mixture into greased baking dish, 8x8x2-inches.
Bake about 10 minutes or until mixture is bubbly.
Stir (dry) baking mix and 1/2 cup cold water to a soft dough. Gently smooth dough into a ball on floured cloth-covered board. Knead 5 times. Roll dough 1/2-inch thick. Cut with floured 2-inch cutter. Place biscuits on hot mixture.
Bake about 15 minutes longer or until biscuits are golden.
Makes 6 servings
