Recipe: Mint-Marinated Salmon Steaks (make ahead, grilled)

MINT-MARINATED SALMON STEAKS

"Cut the steaks near the center to test for doneness. Grilling time will vary, depending upon weather conditions."

1/2 cup white wine
1/4 cup olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lemon juice
1/4 cup chopped fresh mint
4 (3/4-inch-thick) salmon steaks

Combine first 7 ingredients. Place salmon steaks in a shallow dish; pour wine mixture over salmon. Cover and chill 2 hours, turning salmon occasionally.

Remove salmon from marinade, discarding marinade.

Coat grill rack or fish basket with vegetable cooking spray, and place salmon on rack or in basket.

Cook, covered with grill lid, over medium coals (300 to 350 degrees F) 10 minutes on each side or until done. Remove from heat; cover and chill.

Serve chilled.
