this is a really good one!
2 lb pork tenderloin
2 cans mushroom soup
1/2 dry white wine
1 t thyme ( can be dried or fresh )
1/4 c. flour
1 can mushrooms pieces & stems ( although I used fresh tonight )
salt & pepper to taste
Method: Slice pork to about 1" thick in round medallions,dredge lightly in flour,brown in a large non stick frypan in a small amount of cooking oil ( just a blob ) add the soup,wine,thyme,mushrooms, simmer on low heat for about 45 min.
Garnish with parsley and or cashews,almonds..
Enjoy!
