Recipe(tried): Pork Tenderloin with Mustard Sauce, Broccoli Salad, Knock You Naked Brownies
Menus Good morning everyone!
Today promises to be beautiful. I'm sitting here at my computer in my classroom, looking out at the schoolyard, and there are only a few small piles of snow left. I can't wait until they're gone, and replaced by tulips and daffodils! It won't be long now! Well, today I had hoped to eat leftovers for dinner, but my husband and son took care of that last night. Tonight I have my quilting class, so I will throw everything in the oven and leave the guys to fend for themselves. I'm working on a baby quilt for my new little grand-niece, but mostly my quilting group just gets together and laughs and eats. I made the Broccoli Salad last night, so it's done. Here are the recipes for the rest of the dinner:
Pork Tenderloins with Mustard Sauce
2 pounds whole pork tenderloin, about 1-1/2 inches in diameter
1 garlic clove, cut in half
1-1/2 tsp. salt
1 cup red wine
1/2 tsp. onion salt
1/2 tsp. Beau Monde
Mustard Sauce:
1 cup mayonnaise
1 TBSP. honey
1 TBSP. chopped fresh parsley
2 tsp. prepared mustard
1 tsp. curry powder
1/2 tsp paprika
Rub the tenderloin with the cut garlic. Sprinkle with salt. Bake in a shallow baking pan at 325 degrees for about 1-1/4 to 1-1/2 hours. Combine the wine, onion salt, and Beau Monde in small saucepan. Simmer for a few minutes until heated through. Combine all the Mustard Sauce ingredients. Slice the tenderloin, pour hot wine over the slices, and serve the Mustard Sauce on the side in a separate dish. Serves about 4-6.
Rice Casserole
1 cup Uncle Ben's long grain rice
1 med. can sliced mushrooms (undrained)
1 can French onion soup
1 can sliced water chestnuts, drained
1/2 stick of butter
Mix all ingredients in a casserole dish. Top with a few extra butter pats, and bake uncovered at 350 degrees for 1 hour, or 325 degrees for 1-1/2 hours.
Broccoli Salad
2 bunches broccoli florets
1 cup chopped onion
1 cup raisins
1 cup sliced fresh mushrooms (you can omit if you want)
1 small can mandarin oranges, drained
1/2 cup cashew nuts
1/2 pkg. of bacon, fried and crumbled
Dressing:
1 cup of mayonnaise
1/2 cup sugar
2 TBSP. vinegar
1 tsp. prepared mustard
1 tsp. paprika
Mix dressing ingredients until smooth. Cover and refrigerate till serving time. Combine the salad ingredients. Refrigerate. Just before serving, pour dressing over salad.
Knock You Naked Brownies
1 cup Bisquick
1 cup sugar, divided
3 TBSP. plus 1/3 cup cocoa, divided
1/2 cup milk
1 tsp. vanilla extract
1-2/3 cups hot water
Mix biscuit mix, 1/2 cup sugar, and 3 TBSP. cocoa in an 8X8 glass baking dish. Stir in the milk and vanilla until blended. Sprinkle with the remaining 1/3 cup of cocoa and 1/2 cup sugar. DO NOT STIR! Pour water over top and DO NOT STIR! Bake at 350 degrees for 40 minutes. The top will look and taste like a Brownie, but underneath it will be a YUMMERS chocolate sauce. If you serve it with vanilla ice cream, it's so good it'll knock you naked!
