Recipe: Posted for the COOKIE LADY.....

Strawberry Shortcut Shortcake:
1 c. mini marshmallows
2 (10 oz.) pkgs. frozen sliced strawberries in syrup, completely thawed (2 cups)
1 (3 oz.) pkg. strawberry flavored gelatin
2 1/4 c. flour
1 1/2 c. sugar
1/2 c. shortening
3 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 tsp. vanilla
3 eggs

Generously grease the bottom of 9 x 13 cake pan; sprinkle marshmallows evenly over the bottom of pan. Thoroughly combine thawed strawberries and syrup with dry gelatin; set aside. In large bowl, combine remaining ingredients together. Blend at low speed until moistened; beat 3 minutes at medium speed. Pour batter evenly over marshmallows, and spoon strawberry mixture evenly over batter. Bake at 350 degrees for 45-50 minutes until golden brown and toothpick inserted comes out clean. Serve warm or cool. Can even serve with icecream and/or whipped topping. Enjoy!

When this cake is finished,it will seem to have turned completely upside down.
