This is my paternal Grandmother's recipe for potato pancakes.
POTATO PANCAKES A LA GRANDMA MIN
1 large onion, diced
1/2 lb. diced bacon
6 to 8 large potatoes, peeled
2 Tablespoons flour
1 egg, lightly beaten
1 teaspoon salt
Saute bacon and onion together until well browned. Drain and reserve.
Preheat griddle to 380 degrees.
Grate potatoes on safety grater* over large bowl, do not drain. Mix in flour, beaten egg, salt and reserved onion/bacon mixture.
Drop mixture by 1/4 cupfuls onto preheated greased griddle, shaking griddle slightly to spread pancakes out a bit. Let cook on first side until quite dark brown. Flip to other side and continue cooking until second side is quite dark brown. Keep cooked pancakes warm in oven while frying the rest.
Serve with sour cream and pancake syrup.
