Recipe(tried): Luby's Cheesecake (fluffy version) - Here it is!

This recipe was hand-written and "down-sized" to make TWO pies. This is the "FLUFFY" one that does not appear in the Luby's Cookbook.

LUBY'S CHEESECAKES

3 packages (8 oz. each) cream cheese
1 1/2 cups sugar
1/2 pound (1 cup) butter or margarine, room temperature
1/2 tablespoon fresh lemon juice
1/4 teaspoon vanilla extract
1 pint heavy (whipping) cream, whipped
2 graham cracker crusts
graham cracker crumbs (for garnish)

Cream together first three ingredients until fluffy. Blend in lemon juice and vanilla extract. Fold in the whipped cream.

Pour into 2 graham cracker crusts and sprinkle top with graham cracker crumbs.

Refrigerate at least 3 or 4 hours before serving.
