FRENCH FRIED GOLDEN LOUISIANA YAMS
3 golden Louisiana Yams
3 cups ice water
1 tbsp salt
vegetable oil for frying
confectioners sugar to taste
Wash and peel the yams. Cut peeled yams into strips suitable for deep fat frying.
Mix ice water and salt. Add yam strips to salt water. Soak strips in salted water about 10 minutes.
Drain and then dry between absorbent paper towels.
Preheat Vegetable oil to 365 degrees F.
Add strips of yams and fry until brown.
Drain well on arbsorbent paper. Sprinkle with confectioner's sugar or salt, if desired.
Servings: 4
