Recipe: Pumpkin Gems

Not sure if this is what you are looking for, but sure does sound wonderful.

Pumpkin Gems

1 1/3 c. sugar
1/3 c. shortening
2 eggs
1 c. mashed pumpkin
1 1/3 c. flour
1 tsp. baking soda
1/4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. vanilla
1/3 c. water
1/2 c. chopped nuts (optional)

In large bowl beat together sugar, shortening and eggs. Stir in pumpkin. Mix dry ingredients together and add to pumpkin mixture, stirring well. Mix in vanilla, water and nuts. When filling paper baking cups with mixture, put about a tablespoon of batter in bottom, then spoon in about 1 teaspoon of filling mixture and top with more pumpkin batter. Bake at 400 degrees for 15 to 18 minutes or until toothpick comes out clean from center. If desired, sprinkle cinnamon sugar on top of muffins before baking.

Filling Mixture: Beat together 3 ounces softened cream cheese, 1 small egg and 1/4 cup sugar.
