MIXED GRAIN BANANA MUFFINS
4 to 5 ripe, medium-sized bananas, peeled and cut into 1-inch pieces
1/2 cup butter or margarine, at room temperature, cut into 8 pieces
1/2 cup packed light brown sugar
1/4 cup milk
2 large eggs
1 cup whole wheat flour
1 cup uncooked quick-cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped peanuts
Heat oven to 375 degrees F.
Fit processor with steel blade. Place bananas in work bowl and process until bananas are mashed, about 10 seconds. You should have about 1 1/2 cups mashed bananas.
Add butter, sugar, milk and eggs to bananas. Process until smooth, about 1 minute.
Add flour, oats, baking soda and salt; process on/off 3 or 4 times or just until flour is moistened. Do not overprocess. Batter should be lumpy.
Sprinkle peanuts over batter. Process on/off just until peanuts are mixed
into batter.
Spoon batter into greased muffin cups, filling each about 2/3 full.
Bake until golden, 20 to 25 minutes. Serve warm.
Makes 18 muffins
