Recipe: Pumpkin Pudding (using instant pudding mix)

Tastes like pumpkin pie without the crust!
1 package (3.4 ounce) instant vanilla pudding
1 cup canned or mashed pumpkin
1 1/2 cups milk or skim milk
1/2 teaspoon cinnamon (or pumpkin pie spice)
Beat pudding mix and milk together until well blended, about 2 minutes. Stir in pumpkin and cinnamon. Chill before serving.
