Recipe: Pumpkin Whoopie Pies

PUMPKIN WHOOPIE PIES

1 lb. light brown sugar
1 c. cooking oil
2 eggs
1 tsp. cinnamon
1 tsp. cloves
1 tsp. ginger
1 tsp. vanilla
1 tsp. baking powder
1 tsp. baking soda
2 c. pumpkin
3 c. flour

Cream sugar and eggs together. Add oil; mix. Add
spices, vanilla, baking powder and soda; mix again. Stir in
pumpkin. Add flour last; drop by scant teaspoon onto lightly
greased cookie sheet. Bake at 350 degrees for 12 to 15 minutes.

Filling:
2 egg whites
2 tsp. vanilla
4 Tbsp. flour
4 Tbsp. milk
1 1/2 c. shortening
4 c. + 2 Tbsp. 10x sugar
Beat egg whites, vanilla, flour, milk and shortening.
Add 10x sugar; beat until icing is light and fluffy, approxi-
mately 10 minutes.
