Recipe: Quarterback Sandwiches
Misc.QUARTERBACK SANDWICHES
6 fresh mushrooms, sliced
1 medium tomato, thinly sliced
1 green pepper, thinly sliced
6 black olives, sliced
1/2 cup Italian salad dressing
1 round (1 lb.) unsliced Italian bread
4 lettuce leaves
1 pkg. (12 oz.) variety meat pack
1 pkg. (6 oz.) sliced Swiss cheese
8 long wood or plastic skewers
Combine the first four ingredients and half the dressing in a bowl. Let stand 15 minuts; drain. Meanwhile, cut bread in half horizontally. Hollow out bread from both halves leaving a shell about 1" thick. Sprinkle remaining dressing on each bread half. Line bottom half of bread with 2 lettuce leaves. Top with half the meat and cheese slices, vegetables, remaining meat and cheese slices and vegetables,lettuce and top half of bread. Insert 8 long skewers in a circle through sandwich to secure. Cut into 8 wedges.
