Recipe: Marine Minestrone (using clam juice and fish fillets)

1 medium onion
1 medium carrot
2 stalks celery
1/4 cup fat or oil
2 cups clam juice
2 cups water
1 (2 pound, 3-ounce) can Italian tomatoes
2 cups thin noodles, uncooked
1/2 teaspoon oregano
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper (to taste)
2 pounds fish fillets
Grated Parmesan and/or Romano cheese (optional, for serving)
Chop onion, carrot and celery. Put into 5 to 6-quart pot and saute in fat or oil until vegetables are tender.
Add clam juice, water, tomatoes, noodles and seasonings. Simmer, covered, 30 minutes.
Cut fish into bite-size pieces. Add to soup and simmer until fish flakes easily when tested with a fork, about 10 minutes.
Serve with grated cheese, if desired.
Makes 6 hearty servings
