Recipe: Nutty Rice Salad (using brown rice, celery, raisins, and peanut butter)

2 cups cooked brown rice
1/2 cup chopped celery
1/2 cup raisins
1/4 cup sliced green onions
1/4 cup chopped parsley
1/4 cup chunky peanut butter
3 tablespoons lemon juice
1 clove garlic, minced
3/4 teaspoon salt
1/8 teaspoon pepper
Lettuce leaves (for serving)
In large bowl, combine rice, celery, raisins, green onions and parsley. Set aside.
In small bowl, mix peanut butter, lemon juice, garlic, salt and pepper. Pour over rice mixture. Mix lightly but thoroughly. Cover and refrigerate at least 1 hour to blend flavors.
Serve on lettuce-lined platter.
VARIATION:
Omit the garlic. Add 1 medium apple or pear, coarsely chopped. Garnish with apple or pear wedges.
Makes 6 to 8 servings
