RAISIN APPLESAUCE CAKE
1 cup raisins
1 cup walnuts
Rind of half an orange
1/2 cup shortening
1 cup sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 egg
1 cup thick, strained, unsweetened applesauce
2 cups sifted all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
FOR THE ORANGE GLAZE:
1/3 cup orange juice
1/2 cup sugar
Preheat oven to 350 degrees F. Grease and flour a 9-inch square baking pan.
Pour boiling water over raisins; let stand a few minutes to plump. Drain, then dry on absorbent paper.
Put through a food chopper with nuts and orange rind, using medium blade. Set aside.
Cream shortening and sugar with spices until light and fluffy. Add the egg, beating well. Blend in applesauce.
Sift together dry ingredients and add to creamed mixture, beating until smooth. Stir in raisin-nut mixture. Spread in prepared pan.
Bake in moderate oven (350 degrees F) about 1 hour.
While cake bakes, combine orange juice and sugar, and stir until sugar dissolves. Pour slowly over warm, not hot, cake. Let cake cool before cutting.
Makes 1 (9-inch, single layer) cake
